Mutton Curry/Kosha Mangsho

Juicy mutton pieces cooked in hot spices. Kosha Mangsho is a famous Bengali mutton curry popular for its rich taste and spiciness.

Method

Step 1 :

Roughly chop 5-6 onions. Clean meat pieces and add those onions, ginger garlic paste, haldi, dhaniya powder, jeera powder, salt, garam masala and mustard oil. meat masala should also be fine.

Step 2 :

Marinate for half an hour after leaving in a refrigerator.

Step 3 :

 Now in a pressure cooker add mustard oil, khada garam masala, bay leaves, lavang, badi elaichai, choti elaichi, grated numeg, cinnamon stick and few chillies.

Step 4 :

Let them crackle and then add the marinated mutton and fry for 10min and then add half glass of water and cover the lid. Let it cook for 10-15min. Don't over cook it as you need to fry again.

Step 5 :

Open the lid and put it on a high flame and keep stirring them to avoid sticking at the bottom. keep frying till the oil starts separating. Once u see the oil separating, pour the required amount of water you need for gravy.

Step 6 :

Add one teaspoon of garam masala and switch off the flame. Check the meat , if it's cooked or not. If it's not yet cooked cover the lid for few minutes. Now Mutton Curry is ready to serve.
