Method

Step 1 :

Slit the brinjals into 4 (with stem) & soak in water.

Step 2 :

Splutter mustard seeds in oil, add curry leaves, MAGGI Bhuna Masala & saute for a minute.

Step 3 :

Add powdered spices & fry for a minute. Mix in the brinjals and cook on low flame till done.

Step 4 :

Add tamarind pulp and MAGGI Coconut Milk Powder dissolved in 1 cup warm water. Boil & simmer for 10 minutes. Garnish with coriander leaves.
