Ingredients

Step 1 :

Keep all the ingredients ready, the garlic, spring onions and greens chopped into juliennes.

Step 2 :

In a large pot boil take plenty of water, add some salt and oil to this. Add the noodles to the boiling water.

Step 3 :

When the noodles are done, drain through a colander (take care the noodles are not over cooked, keep them al dente).

Step 4 :

Quickly pour some water over the noodles.

Step 5 :

In a wide wok or kadai, add the oil. When the oil becomes hot, add the garlic and saute.

Step 6 :

Next add the onions, spring onions and saute until the onions turn pale.

Step 7 :

Put the vegetables and saute on high flame. Add the soy sauce and salt and continue sauteing for 3 more minutes.

Step 8 :

Add the boiled and drained noodles and mix well.

Step 9 :

Add the schezwan sauce and once again mix everything, the noodles, vegetables and sauce together.

Step 10 :

Sprinkle spring onion greens on top of the noodles.

Step 11 :

Serve with mixed condiment of chilli-soy sauce-vinegar.
