Peel skin from the carrots and wash them properly. Then grate them.

Put mawa (khoya) in a frying pan and fry well, on a low flame. Take out the fried mawa (khoya) in a bowl.

Put the grated carrot in the frying pan, put it on the burner, and mix sugar in it. Keep stirring in short intervals. Carrots will start boiling, and their juice will start oozing out. Keep stirring at 5 minute intervals.

After all the juice has burnt, add the ghee and cook it. Now mix the raisins and mawa (khoya) in it.

Stir the Halwa (pudding) for 4 to 5 minutes on low flame. Turn off the burner. Mix the cashew nuts pieces and raisins in the Halwa. Your carrot Halwa (pudding) is ready.
