Gyoza is a Japanese dumpling. During New year, every family makes these dumplings to show the togetherness and welcoming of other members of family home.
Mix the Maida/flour, salt and water in a bowl. Mix it until incorporated together. Knead it for 2 to 3 minutes. Keep it rest in a plastic bag for 30 minutes.

After 30 minutes, knead the dough until soft and smooth. Slice it into half. Keep another in the plastic bag to avoid the dough to be dry. Slice the other half into 5 to 6 small pieces.

Dust your working surface with flour. Flatten the small piece dough with rolling pin/ bottle into round shape. You may cut it into rectangular with knife.

If it is stick on the pin or surface, keep dusting it with flour. Continue flatten it until the dough is finished. You may use it directly or freeze it for one month usage.
Step 5
: For Filling
Prepare the vegetable. Mix all ingredients in the bowl. Season it with the salt, pepper, soya sauce, sesame oil.

Get one wrapper, put half tablespoon to one tablespoon of fillings (depends on how big your wrapper) in the middle of wrapper and pinch the end side of wrapper together until it is stick together.

Keep doing it until your wrapper is finished. Keep the finished wrapper on the plate with flour dusted.
Step 8

Get your non-stick pan, pour 1 tablespoon and a cup of water into the pan. You may cook it into two batches so the Gyoza is cooked evenly.

Place your wrapper into the pan (6 pieces). Close the pan with the lid. Let it steam out until the water dry out and pan fry the wrapper both side until golden brown.

If you do not have lid on your pan. You may leave it open, please check out the water level because it needs more water (one and half cups water is needed for one batch cooking).

Mix the dipping sauce ingredients together and serve it with the ready gyoza.
