Masala Rotis With Baingan Chutney

Step 1 : For Dough Preparation

Mix all the flours together(Bajri, Besan & Wheat). Add some salt and turmeric powder. Mix well. Now add the washed methi leaves, green chillies and rest all ingredients.

Step 2 :

Add 2 tablespoon oil to the mixture. Mix well. Using very little water knead into dough. Make balls of equal size from the dough and Using a rolling pin make rotis out of it. Now adding little ghee fry from both sides till golden.

Step 3 : For Chutney Preparation

Make piercing in Baingan using fork and brush it with cooking oil. Put in pressure cooker and let it cook on medium flame for 10 minutes. Now remove baingan from cooker. Let it cool and then peel it off.

Step 4 :

Put baingan, garlic and green chillies and salt in a mixer jar and grind them to fine paste. In a nonstick pan add some oil and put mustard, cumin seeds and let them crackle and then add the baingan mixture. Cook for 2 minutes.

Step 5 :

Remove from pan and when it cools add dahi to it. Baingan Chutney should be served with Hot masala rotis during winters.
