Lamb Biryani

Piping hot delicious lamb biryani!

Cooking Steps

Preparation

Step 1 :

Mix the meat with the ingredients for marination and place it in the fridge overnight, letting it rest.

Step 2 :

Grind the ingredients mentioned under the biryani masala in a dry mixie jar until it reaches a fine powder like consistency and set this aside.

Step 3 :

Add the onions to a blender and make a fine paste adding little water. Grind the ginger and garlic adding a little water and set this paste to rest.

Step 4 :

Add oil to a pressure cooker and saute the onion paste until the raw smell goes. Add the ginger garlic paste, green chillies to this and keep frying until the raw smell goes.

Step 5 :

Add the meat to this mixture, mix salt, turmeric and red chilly powder, garam masala, coriander powder and let it cook in an open cooker for ten minutes. Cover the lid of the pressure cooker and use the valve.

Step 6 :

After 5 to 6 whistles, open the cooker lid when the steam is let out. Add the dry biryani masala to the semi cooked lamb along with the washed pudina leaves.

Step 7 :

Add two cups of water to the meat and pressure cook the lamb mixture once again. Take a kadai, add the jeera rice and ghee and a spoon of red chilly powder to the rice and saute it well and keep it inside an electric rice cooker if possible.

Step 8 :

Let the lamb cook for 5 more whistles and once you open the lid, check the meat for consistency; it should be extremely soft and have blended well with the powders and pastes. Add the rice and lamb biryani masala together in the cooker.

Step 9 :

Add water in the ratio of 1:3 and subtract one glass of water and add a glass of thick unsweetened coconut milk instead. Cover the electric cooker and switch it on to cooking mode.
