Aloo Meat Curry

Prepared mutton, potato and heavily spices, this is a feast fit for kings.

Preparation

Step 1 :

Marinate mutton and the potatoes with yoghurt, turmeric powder, garlic-ginger paste, red chilli powder, salt and mustard oil and keep in the fridge.

Step 2 :

Smoke mustard oil and add the whole spices. Add 2 tsp sugar. When the sugar is carmelised, add the onions and the chopped garlic.

Step 3 :

Fry till onions are light brown. Add the ginger and green chillies and cook till onions are dark brown. Add salt and tomatoes and cook till oil separates.

Step 4 :

Remove the bay leaves and black cardamoms and keep aside. Cool the masala and blend to a fine puree.

Step 5 :

Heat 1 tbsp desi ghee and add the above puree with the whole spices that were kept aside.

Step 6 :

Add 3 tbsp coriander powder, 3 tsp red chilli powder and 2 tsp meat masala. Cook for 5 minutes, then add the marinated mutton and potatoes.

Step 7 :

Add 1 tsp ajwain and bhuno for 10-12 Minutes. Lower the heat and keep stirring for 10-15 minutes. Transfer to a pressure cooker and add 2-3 Cups of hot water.

Step 8 :

Pressure cook on high for 10 minutes, then on sim for another 10-12 minutes. Allow to de-pressurise. Adjust seasoning and curry as desired. Drizzle 3-4 tsp MO and serve with rice.
