Preparation
For kneading the dough of the donuts, take the warm milk in a bowl and add in the sugar and then the yeast. Give it a light stir and let it rest for around 8-10 minutes or until it gets frothy on top.
Next, in a large mixing bowl, add in the flour, milk powder, baking powder and salt and mix everything well.
Now make a small depression at the centre of the bowl and add in the yeast. Mix everything well with the help of a spoon or a spatula.
With the help of your hands, start kneading the dough and after kneading for around 4 minutes, add in the softened butter and the vanilla essence. Again, knead for around 5-6 minutes or until it has come together and became soft and smooth.
Now cover it and let it rise for about an hour or until it has doubled in size.
After it has doubled, punch it down and if it is too sticky, add in just a tablespoon of dry flour and again knead for a minute.
Roll the ball of dough using some dry flour into ½ inch thickness and then cut it using a donut cutter or any round cutter. If you are not using a donut cutter, then use a lid of any soda bottle for the centre hole. Keep doing this for all the donuts.
Carefully place them in a tray and brush them lightly with some oil. Cover them with a plastic wrap/kitchen towel and keep them aside for another 30-40 minutes in order for them to rise.
Meanwhile, prepare the chocolate glaze. For that, take the chopped chocolate in a bowl and add in the fresh cream and the butter and melt it in a microwave for 30 seconds. Then stir and microwave it again for another 20 seconds or till it becomes smooth and glossy.
Now, check the donuts, they must have doubled in size. Heat oil for frying and let it be on consistent low to medium-high heat.
Fry the donuts on consistent low to medium-high heat so they are not raw from inside and they get evenly cooked. Keep flipping and frying it as desired until it gets a nice golden brown coating on all the sides.
Once fried properly, remove it and place on a kitchen towel. Do this for all.
Once all are ready, dip them one by one on one in the dark chocolate sauce on one side and remove the excess if any.
Place them in a dish and decorate with some sprinkles and chocolate chips or any nuts of your choice on top.
Serve them immediately or you can store them in any container in refrigerator and consume within 5 days.
