Quinoa Pongal

A healthy pongal which is completely gluten free! Enjoy it for breakfast, lunch or dinner.

Preparation

Step 1 :

Soak quinoa and split moong dal with water for 1 hour. Add slit green chillies too and pressure cook for 4-5 whistles.

Step 2 :

Pound jeera and pepper to a coarse powder. Add curry leaves and ginger and keep it ready.

Step 3 :

Add salt to the cooked quinoa moong mixture and mash it up nicely.

Step 4 :

Roast the cashews in ghee and keep it aside.

Step 5 :

In the same ghee, add the powdered jeera and pepper powder along with curry leaves and ginger.

Step 6 :

Add the required amount of hot water to the Quinoa pongal to bring it to the right consistency.

Step 7 :

Add the seasonings to the ghee and cashews.

Step 8 :

Serve this awesome tasty pongal with chutney of your choice.
