An easy and delicious quinoa pulav for week night dinner. As a working woman, such recipes are a breeze to make even after a hectic day at work.

Preparation

Step 1 :

Wash and cook 1 cup of quinoa with 3/4 - 1 cup of water, some salt and extra virgin olive oil. Pressure cook it on medium heat for two whistles.

Step 2 :

In a frying pan, sauté onion for a minute. Add green bell pepper and sauté it until tender. Add tomato and fry until tender. Add salt n pepper to taste.

Step 3 :

In a separate pan, fry the mushrooms in a little oil along with garlic until all the water is evaporated. Add salt and pepper as per taste.

Step 4 :

Add both the veggie mix together along with cooked quinoa. Enjoy.

Step 5 : Optional

Add some lemon juice or Slightly fry boiled eggs and add salt and pepper.

Step 6 :

Super yummy and quick weeknight dinner is ready in no time!
