Cheese Stuffed Quinoa Cakes with Pomegranate Sauce

The recipe 'Cheese stuffed Quinta cakes with pomegranate sauce' is inspired from the idea of a tikki. I have modified the tikki into a healthier version with quinoa. Even the cheese stuffing is optional. Except the cheese, every other ingredient is very good for health- be it basil leaves, lemon or pomegranate. Quinoa cakes can be ideally served with pomegranate as it will complement the taste.

Preparation

Step 1 :

Wash the quinoa well and then strain the water using a strainer.

Step 2 :

Now turn on the flame and bring the quinoa to boil. Add 1 tsp salt. Boil the quinoa for about 15 minutes.

Step 3 :

Meanwhile, when the quinoa is getting boiled, take pomegranate juice in another saucepan and reduce it. Add 2 tbsp. of dusted sugar and a pinch of salt to balance the flavour. Reduce the sauce for 3-4 minutes to achieve a medium consistency (neither too thick nor too loose).

Step 4 :

After the quinoa is boiled, add bread crumbs, grated coconut, green chilli and basil leaves in the quinoa. Turn off the flame and then add lemon.

Step 5 :

Let the quinoa cool for about 10 minutes so that we can shape it.

Step 6 :

Shape the quinoa using a small greased bowl. First, take a small amount of quinoa in your hands and mould it in a round shape. Make a hole and stuff cheese into it. Now put the stuffed quinoa into the small bowl and press lightly with your hands. Take out the quinoa cakes carefully.

Step 7 :

Now turn on the flame and add butter. Fry the quinoa cakes in light flame till it turns brown in colour from both the sides.

Step 8 :

Let the quinoa cakes cool a little bit before serving.

Step 9 :

Use the pomegranate sauce to plate the quinoa cakes. Then top the cakes with cream, pomegranate and basil leaves.

Step 10 :

The dish is now ready to be served.
