In a bowl, add all-purpose flour (maida). Add egg, salt, sugar and baking powder. Whisk the mixture to prepare a thick batter of flowing consistency.

In a wok, add olive oil. Add chopped onions and chopped garlic. Sauté well until it changes colour. Add salt, black pepper powder, mixed herbs and red chilli flakes.

Now add chopped mushrooms and cook until they are tender.

Lastly, add grated cheese and switch off the gas. Top it with chopped coriander.

Now, take a non-stick pan. Take one ladle full of prepared maida batter and spread it evenly.

Turn it on the other side and cook. When it is ready on both sides, fill the prepared mushroom filling and fold the pancake.

Pancake is ready. Serve it with any salad of your choice.
