A filling and satisfying recipe! I make the legume spread, refrigerate it and use when I am pressed for time.

Method

Step 1 :

Soak the chickpeas for 6 hours.

Step 2 :

Cook the chickpeas in a pressure cooker. Cool and drain.

Step 3 :

Add the yogurt, lemon juice, garlic and salt. If the mixture is too thick, add water to get the desired consistency.

Step 4 :

Blend in a blender until the mixture is smooth. Before serving add the capsicum, celery, spring onions and red chili powder.

Step 5 :

Warm the pita bread, spread lettuce leaves, add the spread and salad mixture.
