Hearty Lentil Soup

Popular in Middle Eastern and Mediterranean cuisines, the lentil soup makes for a satisfying meal. Traditionally, it is served with an extra drizzle of olive oil and vinegar which lends a distinct taste. Enjoy the soup with toasted pita bread, cornbread, thick slice of sourdough, garlic bread, or even garlic naan.

Preparation

Step 1 :

Cook lentils al dente.

Step 2 :

Heat olive oil in a pan. Once hot, add onion, garlic, bay leaves, carrot, celery, broccoli stems and salt.

Step 3 :

Sauté until the onions are translucent, approximately 5-6 minutes.

Step 4 :

Add the dal, tomatoes, broth and cumin powder. Stir to combine.

Step 5 :

Increase the heat to medium high and bring just to a boil.

Step 6 :

Reduce the heat to low, cover and cook at low for 10-15 minutes.

Step 7 :

Add broccoli florets and spinach. Cook for another 5 minutes.

Step 8 :

Turn the heat off and add fresh coriander, red chilli powder and vinegar. Mix well.

Step 9 :

For the flavours to blend, let it sit for a few minutes before serving.

Step 10 :

Drizzle some olive oil, vinegar and some hot sauce on each bowl for that extra kick.
