Green Gram and Gooseberry Summer Salad

Green gram lentil is rich in protein and very nutritious. Goose berries are a great source of Vitamin C. Green gram lentil and gooseberry salad is made using green gram, carrot, gooseberry(amla), pomegranate and coconut. It makes a nutritious snack as well as a dinner option.

Step 1 :

Soak almost a handful of green gram dal for 6-7 hours or overnight.

Step 2 :

Measure 5 tablespoons of soaked green gram dal and place in a bowl.

Step 3 :

Add carrot, amla, coconut and pomegranate seeds.

Step 4 :

Mix it until well combined.

Step 5 :

Mix required salt.

Step 6 :

Heat oil in a small pan, allow mustard seeds to splutter followed by green chilli and curry leaves.

Step 7 :

Turn off the stove and mix this to the salad.

Step 8 :

Garnish with coriander leaves and serve.

Step 9 : Notes:

This salad can be prepared using sprouted green gram as well. If you do not want to do the seasoning with oil, it can be skipped. In this case, add the green chilli directly to the salad. Preparation time includes the soaking time. Additionally, you can add 1/4 tsp fresh lemon juice for that extra punch.
