Pineapple Tart

This delightful pineapple tart is filled with sweet and a ting of sour pineapple jam. This delicacy is usually cooked during New year in Vietnam.

Cooking Steps

Step 1 : To prepare pineapple jam

Cut the pineapples into small pieces or you can use grinder to make a pineapple paste.

Step 2 :

Add the paste in a non-stick pan with sugar and a cinnamon stick.

Step 3 :

Let the paste boil on low flame. The pineapple will ooze out all water from it, the sugar help extract water from the pineapple.

Step 4 :

Allow it to boil on low flame to ensure all the water evaporates. Stir it at regular intervals to avoid the mixture from sticking at bottom of the pan.

Step 5 : For the dough

Beat butter, sugar and curd together. Add whipping cream and egg yolks and beat again.

Step 6 :

Sieve the flour and add into the mixture. Use hands to knead the dough slowly. Don't knead the dough for long.

Step 7 :

Use cling film to wrap the dough and keep it in the fridge at least for 30 minutes to set.

Step 8 :

Divide the dough into small balls.

Step 9 :

Make the dough flat and put filling in the middle and create round tartlets as your wish.

Step 10 :

Eggwash the tart before baking. It will give a nice golden colour to the tarts.

Step 11 :

Preheat the oven to 175° C and put the prepared tart inside it. Wait for 15-20 minutes and your tart is ready.
