Watermelon Thandai Kheer

It's a Holi special thandai kheer recipe. Enjoy it with extra ice cubes.

Cooking Steps

Step 1 :

For thandai powder soak almonds, cashew nuts, watermelon seeds, peppercorns, fennel seeds, cashew nuts and raisins in a mixing bowl with a cup of watermelon juice for 15 minutes. Then, make a paste of it.

Step 2 :

Boil milk and let it reduce to half it's quantity. Add sugar and semolina to it and stir it constantly.

Step 3 :

Add the prepared thandai paste, mix it well. Ensure there are no lumps present.

Step 4 :

Soak saffron in 2 tbsp hot milk for few seconds and then add it to the kheer.

Step 5 :

Switch off the flame and allow it to cool completely.

Step 6 :

Keep it in fridge for an hour and garnish it with black raisin, pistachios and saffron strands.

Step 7 :

Serve it chilled with ice cubes and watermelon pieces.
