Preheat the kadhai, then add 2 tsp oil, add 1 tsp mustard, 1/2 tsp jeera and 1 inch piece ginger.

Pressure cook potatoes for 3 whistles, peel the skin and set it aside.

Saute the masala well, further add 2 boiled and mashed potatoes to it.

Add 1/2 tsp chilli powder, 1/4 tsp chaat masala, 1/2 tsp garam masala and 1/2 tsp salt.

Mix the mashed potatoes well and turn off the flame. Now, add some chutney and a few coriander leaves. The aloo masala stuffing is ready.

Spread butter over the two bread slices. Prepare the green chutney by grinding garlic cloves, green chillies, boondi, salt, curd and mint leaves into a smooth paste.

Put a cheese slice on the bread and add cucumber slices over it.

Add a layer of aloo masala stuffing over the cucumber.

Add small pieces of onion, tomatoes, and capsicum over the aloo masala stuffing.

Sprinkle some chat masala and grate some cheese over it.

Cover it with another slice of bread. Spread green chutney over the bread before covering it. Your bombay masala sandwich is ready.
