New York Style Baked Cheesecake (Eggless)

This classic cheesecake is thick, velvety and smooth and paired up with a graham cracker crust.

Step 1 :

Preheat the oven to 350°F.

Step 2 : Prepare Graham Cracker Crust:

Combine graham cracker crumbs, 1/2 tsp salt, 2 tbsp sugar and melted butter and stirring well.

Step 3 :

Press firmly into the bottom and slightly up the sides of a 9-inch or 10-inch spring form pan. Pre-bake for 8 minutes.

Step 4 : To make the filling

Use a handheld or stand mixer fitted with a paddle attachment, beat the Britannia cream cheese, 250 gm of sugar, heavy cream, 100 gm sour cream, a pinch of salt and 2 tsp of vanilla essence together on medium-high speed in a large bowl until the mixture is smooth and creamy, about 2 minutes.

Step 5 :

Now, gently fold in the flour such that no lumps are formed.

Step 6 :

Pour batter over cooled crust and spread evenly.

Step 7 :

Bake cake for 10 minutes, then lower temperature to 225°F (110°C) and continue to bake for 60 minutes until golden brown around the edges, the sides are set but the center is still slightly wobbly.

Step 8 :

Spread 120 gm sour cream mixed with 15 gm powdered sugar and 1/2 tsp vanilla essence, over the cheesecake right to the edges.

Step 9 :

Cover loosely with foil and refrigerate for at least 8 hours or overnight.

Step 10 :

Slice and serve plain or drizzle some berry sauce on top.
