Korean Chicken with Yum Yum Sauce

Korean chicken with baked vegetables and yum yum sauce is really a healthy, colourful and tasty weekend dinner. Any veggies, you like can be added.

Step 1 : To make the Gochujang sauce

Take soya sauce, green chilli, ginger, garlic, 1 tbsp olive oil, honey and sesame seeds in a mixing jar. Make a smooth paste of it.

Step 2 :

Now take the chicken in a bowl and toss it with half of the Gochujang sauce and salt. Cover it and keep rest for an hour.

Step 3 :

Cut the sweet potato, radish into round pieces and toss with pepper powder, salt and 2tbsp olive oil.

Step 4 :

Transfer it to a baking tray and bake it in preheated oven for 25 minutes at 200?.

Step 5 :

Meanwhile, heat 2 tbsp olive oil in a pan and fry the marinated chicken in it.

Step 6 :

Cover it and fry it in low to medium flame for at least 20 minutes or until the chicken soft. Add chopped spring onion and cook it few more minutes.

Step 7 :

Combine the remaining Gochujang sauce with yogurt season with salt & keep aside for serving . This is called 'Yum Yum Sauce'.

Step 8 :

Heat 1tsp olive oil in hot tawa & toss the spinach with salt, pepper powder and lime juice for 2 to 3 minutes.

Step 9 :

Boil the brown rice.

Step 10 : To serve

Arrange the rice, cooked chicken, veggies in a bowl or dish & topping with Yum Yum sauce. Add handful of coriander leaves. Dip the veggies in Yum Yum sauce & enjoy.
