Step 1 :

For HappyChef Madras Curry, marinate the mixed vegetables with the contents in the marinade pouch for 10-15 minutes.

Step 2 :

Heat oil on medium high heat in a sauce pan. Add the contents from spice mix pouch and allow it to crackle.

Step 3 :

Add the marinated contents and sauté well until they are at least half cooked.

Step 4 :

Pour the entire contents of the Madras curry sauce and water into the pan, then reduce the heat to simmer, stirring occasionally, until the vegetables are cooked to your liking.

Step 5 :

Happy Chef Madras Curry is now ready. Garnish with coriander leaves and serve hot with freshly steamed rice.

Step 6 :

For Green Rava Vazhakkai Fry, heat oil in a pan.

Step 7 :

Add mustard seeds and when they start to sputter, add the fenugreek seeds, coriander seeds and cumin seeds and sauté.

Step 8 :

Add the green chillies, curry leaves, ginger-garlic paste and sauté.

Step 9 :

Add the mint leaves coriander leaves, salt and sauté.

Step 10 :

Finally, add the carom seeds and sauté until the raw smell is gone from all the ingredients.

Step 11 :

Let the ingredients cool and add it to a blender.

Step 12 :

Add the turmeric powder, vinegar, and only required amount of water to blend to a smooth but thick paste.

Step 13 :

After blending, transfer the contents to a large bowl. If the paste is too thin, add required amount of corn flour to thicken it. Also add half the amount of asafoetida and enough salt as required.

Step 14 :

Now, add the sliced plantain to the bowl and coat all the slices in the paste very well.

Sprinkle some rava (semolina) (not too much) on the slices.

Step 17 :

Heat oil on a tawa and shallow fry the slices.

Step 18 :

Now, heat oil in a pan and add the remaining mustard seeds, curry leaves, asafoetida and the dried red chillies.

Step 19 :

Once the mustard splatters, add the fried plantain slices and toss it quickly.

Step 20 :

Green Rava Vazhakkai Fry is ready to be served. Serve it along with Happy Chef Madras Curry and some freshly steamed rice for best results.
