Orange Smokey Pasta

Made with orange juice and a hint of smokiness.

Bao Bun

Step 1 :

Mix instant dry yeast with lukewarm milk and a tspn of sugar. Allow this to rest for 10 mins.

Step 2 :

In a mixing bowl, take flour, yeast mixture, salt & milk powder. Add butter and make a semi sticky dough of it. Cover it and keep it to rest for an hour.

Step 3 :

After an hour, knead the dough again and then roll it with a rolling pin. Make a big circle of about 3 cm thickness. Then make smaller circles from it.

Step 4 :

Brush oil inside it, fold it and slightly press the front sides.

Step 5 :

Cut square butter paper and put a bun on each.

Step 6 :

Heat a steamer or kadhai on a high flame with water. Steam the buns for at least 10 mins until they puff up. You need to do this in batches.

Pasta Filling

Step 1 :

Now the pasta has to be infused with a special flavour. For this, boil half a cup water with 1 & 1/2 cups fresh orange juice. Add pasta and boil it. Once it's done, strain the excess water. As you have mixed orange juice in the water, don't waste the water. You can add it to any gravy item.

Step 2 :

Heat oil in a pan. Add the chopped garlic, chilli & onion. Let this fry for a few minutes.

Step 3 :

Add all chopped veggies, salt , sauces & 1/2 a cup of orange juice. Cook this on high for few minutes. Don't over cook. Add the boiled pasta and toss it for a few more minutes.

Step 4 :

For the smoky flavour, heat a piece of charcoal over the fire and place it in a small bowl. The add the ghee over it. It will start producing smoke so place the bowl immediately on top of the pasta in the kadhai (with allowing the food to get into the bowl). Cover the kadia and leave it for 2 to 3 mins. After that take the bowl out. This process with give your pasta an amazing smoky flavour.

Step 5 :

Finally take a bao bun, open it an fill it with orange-flavoured smoky pasta. Add extra onion rings and sprinkle some chilli powder on top.
