Paturi, a famous Bengali delicacy, made with banana flower! In other words, Banana Flower Paturi with Raw Mango.

Cooking Steps

Kancha Aam diye Mochar Paturi

Step 1 :

Roughly Chop the banana flower & blanch them. Drain the water completely. Coarsely grind without water.

Step 2 :

Transfer the banana paste to a mixing bowl. Add all paste ingredients, and make sure all the prepared pastes have no water content and thick consistency. Add chopped raw mango, chopped garlic, kalonji, salt, sugar & mustard oil. Mix together properly.

Step 3 :

Wash & clean 3-4 banana flower covers & wipe them dry. Notes: You can also use banana leaves instead of banana covers. If doing so grill, the banana leaves on direct flame for a few seconds before filling the mixture. It helps in folding the leaves easily.

Step 4 :

Grease all the banana flower covers with mustard oil and fill each of them with 2 tbsp of prepared banana flower mixture & slit green chillies. Fold them gently & seal them with a toothpick or tie them with a thread.

Step 5 :

Heat 2 tbsp of mustard oil in a pan, fry all folded banana flower covers on medium flame. Cover & cook both sides for 10-15 min.

Step 6 :

Take them out onto a plate. Discard the toothpicks or cut the threads, open the banana flower covers & enjoy the khatta mitha juicy Paturi with hot steamed Rice.
