Bottle Gourd Ice Cream

A delicious ice cream with the goodness of bottle gourd. It's creamy and ideal for summer.

For Bottle Gourd Ice Cream

Step 1 :

Boil milk in a thick-bottomed vessel/kadai. Add the grated bottle gourd to it.

Step 2 :

Cook it on low heat till the bottle gourd is completely cooked.

Step 3 :

Keep stirring the milk till it is reduced to half and also scrape the sides of the pan from time to time to get the cream into the milk.

Step 4 :

When the mixture reduced to half add food color, cardamom powder and sugar and mix well.

Step 5 :

Switch off the gas and let it cool for some time. Once cooled, add cream and blend the mixture in a blender.

Step 6 :

Transfer it to an air-tight container and keep it in the deep freezer for 5-6 hours. Keep the container out for a few minutes and again blend.

Step 7 : Optional step

Again keep it in the deep freezer. If you blend it 2-3 times at 2-3 hour intervals, you will get a very creamy texture and you will find no crystals in the ice cream. Better to add a layer of cling film before covering it with the lid.

Step 8 :

Finally, bring out the creamy, luscious ice cream and top it with your favourite toppings. Serve it with caramelised cashew nuts.

Step 9 : For caramelised nuts

Add a tsp of butter to a pan. Add nuts and 3-4 tsp sugar. Let the suger melt n caramalise. Let it cool on s baking tray. Serve as required.
