Cooking Steps

Paneer Moti Pulao

Step 1 :

For the rice: Wash basmati rice and soak for half an hour. Boil water and add star anise, bay leaf, peppercorn, cardamom pods and cloves. Add in basmati rice and cook. Once the rice is cooked, remove the spices and strain the water. Let the rice cool. Meanwhile soak saffron strands in warm milk and set aside until the saffron leaves its colour. Mix the saffron milk with the prepared rice and set aside.

Step 2 :

For Paneer Koftas: Mash paneer in a bowl and add in chopped green chillies, salt and pepper. Make small balls out of the mixture and shallow fry them until golden and crispy.

Step 3 :

For Paneer Moti: Mash paneer and add in salt and pepper. Add a teaspoon of cornflour for proper binding. Steam cook the paneer balls without covering with the lid. Once cooked, let the balls cool and then roll them up in silver leaf and set aside.

Step 4 :

For Final Preparation: Heat 1 tbsp oil in a pan. Add in sliced onions, bell peppers and green onions. Add in crushed green chillies and crushed garlic. Season with salt and pepper. Finally add in prepared paneer koftas and rice. Mix carefully and cook for a while and put off flame. Top up with silver paneer balls.

Step 5 :

To give the rice a smokey flavour, heat charcoal on an open flame. Once hot, transfer it to a bowl. Set the bowl on top of the rice, and pour a teaspoon of oil on the piece of coal and close the lid of the pan. Keep it closed for 2 minutes while the coal releases it smoke and gives your rice a nice smokey flavour. Now serve in a bowl and enjoy with you favourite curry.
