Ghee Nankhatai - a delicate and crumbly Indian cookie with a rich ghee flavour that elevates any tea-time experience.

Cooking Steps

Ghee Nankhatai

Step 1 :

Preheat the oven to 180°C for 15 minutes, line the baking tray with parchment paper and grease it with ghee.

Step 2 :

In a large mixing bowl, sieve in the maida, besan, powdered sugar and sooji along with the baking powder. Add cardamom powder and mix well.

Step 3 :

Now in small batches add ghee to the dry flour and mix well. Keep mixing slowly and add more ghee only when needed.

Step 4 :

Once the perfect cookie dough-like consistency is achieved, divide it into 10-12 equal parts.

Step 5 :

Using greased palms, roll each portion into perfect rounds, taking care not to have any cracks in them.

Step 6 :

You can shape it in any way that you like. Sprinkle some pistachio powder if you like.

Step 7 :

Place them on the lined baking tray and flatten them slightly. You can even give it a design of your choice.

Step 8 :

Place in the oven for 15 minutes or until the nankhatai are baked perfectly.

Step 9 :

Remove from the oven and cool for some time. You can pack them in an airtight container for up to a week or enjoy them while warm.
