Sugar Free Pumpkin Halwa

This recipe is a low-carbohydrate version of the Kaddu ka Halwa or Pumpkin Halwa which is usually eaten during fasting. The best part is that unlike other recipes, it does not use any high-carb ingredients like cashews, condensed milk or khoya. The use of stevia in place of sugar makes it perfectly safe for diabetics. Since it is made from a vegetable, the nutrient quotient is high! Easy to cook and requires only 6 ingredients.

Step 1 :

Peel the pumpkin and cut it into small cubes.

Step 2 :

Heat the Ghee in a pressure cooker.

Step 3 :

When the Ghee is hot, add the pumpkin cubes. Immediately switch the flame to low.

Step 4 :

Fry on low heat for 15 minutes. Keep stirring in between to avoid burning.

Step 5 :

While the pumpkin is getting fried, fry the almonds in a separate pan and keep aside.

Step 6 :

After frying the pumpkin on low heat for 15 minutes, turn the flame to high and add water.

Step 7 :

Close the lid of the pressure cooker.

Step 8 :

Pressure cook on high flame until two whistles come. It won't take very long.

Step 9 :

After this, switch the flame to low and cook for 10 more minutes. The pumpkin must have softened perfectly now.

Step 10 :

Let the steam out and check if the pumpkin is cooked properly. It should be. If it is not, pressure cook for 3-4 minutes more.

Step 11 :

When the pumpkin is soft, add the stevia powder and cardamom powder and mash with a masher.

Step 12 :

Turn the flame to high and let the excess water dry out. Keep stirring to avoid burning.

Step 13 :

When the water has dried out, turn off the flame.

Step 14 : For Garnishing

Take out in a plate. Garnish with almonds. Serve hot.
