Puttu (Using Kerala Red Rice)

Puttu is a traditional Kerala food usually taken as breakfast.

Cooking Steps

Steps for Puttu

Step 1 :

Soak Palakkadan Matta Boiled Rice (Kerala Red Rice) for 8 hrs. Drain the water completely using a big stainer.

Step 2 :

Grind it thoroughly to make the puttu flour. Add salt to taste.

Step 3 :

Take 2 cups of water in pressure pan and boil it.

Step 4 :

Take the bamboo puttu steamer and add grated coconut followed by 2 tablespoons of puttu flour.

Step 5 :

Again add 1 teaspoon grated coconut followed by 2 tablespoons of puttu flour.

Step 6 :

Repeat this till the bamboo steamer is full. Add grated coconut at the top of the steamer.

Step 7 :

Place the steamer over the nozzle of the pressure pan's lid and cook for about 5 minutes till the steam comes out from the top of the bamboo steamer.

Step 8 :

Instead of the bamboo steamer you may use coconut shell too. It should be a 3 eyed one.

Step 9 :

Commercially available stainless steel or brass puttu maker may also be used.

Step 10 :

For accompaniment you may boil one cup of sprouted moong dal and add salt to taste. Also fry some pappad or curd chillies to go with it.
