Step 1 :

Grate or crush the garlic and a ± 2 cm piece of peeled root ginger and add to the onions, grate the rind of the lime and add to the onion mix, squeeze the lime and add the juice tot the mixture along with the mustard, cumin, olive oil, vinegar and coriander.

Step 2 :

Wash and peel the carrots and cut them into nice thin slices, mix it all together thoroughly and season to taste with salt and pepper.
