In a kadai, pour oil or ghee and turn the gas on. After the oil or ghee gets warm, add onion and salt. Keep the flame on medium.

Meanwhile, chop capsicum, tomato, potato in same thin and long manner. Chop the green chillies into small pieces.

Once the onion turns into a light pink colour, add capsicum. Keep the flame on medium and cover it with lid for two minutes.

Check if capsicum is half cooked or turns soft. Stir it well and then add turmeric powder, coriander powder, red chilli powder and dry mango (amchur) powder. Stir it thoroughly.

Turn the flame to low and then add the tomato and potato. Stir it gently. Cover the kadai with a lid and boil for 5 to 8 minutes.

Check if all the vegetables are nice cooked and mixed. Then add tomato ketchup. Add garam masala. Mix it softly. Turn off the gas.

Add green chillies.

Pour the veg masala into a glass bowl and garnish with green coriander.
