Preparation

Step 1 :

In a non-stick pan, add oil. Once it heats up, add crushed garlic and sauté till you get a fragrance. Add onions and sauté until they turn light pink.

Step 2 :

Add mushrooms and mix well. Sauté and add all the seasoning. Stir well.

Step 3 :

Add soaked quinoa and mix well.

Step 4 :

After some time, add vegetable stock. Give it a stir. Cover and let it simmer on a low flame until all the liquid is soaked and the quinoa is cooked and fluffy.

Step 5 :

Garnish with parsley. Serve hot.
