Menaskaayi (Kaayrasa)

It’s a regional cuisine, mainly prepared by the Udupi centered Brahmins. It’s mainly eaten with rice. It can also be eaten with idlis, dosas,chapathis, rotis and poories. It has got a sweet sour spicy tangy flavour.It’s usually done with raw mangoes or Indian hog plum( amtekai). When these are out of season, it’s prepared using bitter gourd or raw banana or yam or red pumpkin or brown chana or pineapple.

Cooking Steps

Menaskaayi (Kaayrasa)

Step 1 :

Cut the flesh of the raw mangoes into 2 inch pieces and discard the seed part. If its amtekai, the seed can be used.

Step 2 :

In a cooking bowl take 2 glasses of water.

Step 3 :

Add a lemon sized jaggery, mango pieces, salt and bring to a boil. Mango then gets half cooked.

Step 4 :

In a pan , take coconut oil. Add urad dal, methi seeds, hing , byadgi chillies and roast until urad dal turns brown.

Step 5 :

Remove it into the mixie jar.

Step 6 :

Now roast a big handful of coconut gratings in coconut oil until it gives a nice aroma. Add this to the roasted spices in the grinder.

Step 7 :

Roast til (white or black) in the same pan. Keep aside.

Step 8 :

Grind the mixture in the grinder to a smooth paste. Add the roasted til and grind a few rounds more.

Step 9 :

Add this paste to the mango cooked in jaggery and bring to a boil.

Step 10 :

Cook for a few more minutes till the mixture thickens. Check for salt and add if needed.

Step 11 :

Add seasoning of mustard seeds, urad dal, kari patta, hing and red chillies.

Step 12 :

Serve with hot rice, idlis, dosas or chapathis.
