It’s a regional cuisine, mainly prepared by the Udupi centered Brahmins. It’s mainly eaten with rice. It can also be eaten with idlis, dosas,chapathis, rotis and poories. It has got a sweet sour spicy tangy flavour.It’s usually done with raw mangoes or Indian hog plum( amtekai). When these are out of season, it’s prepared using bitter gourd or raw banana or yam or red pumpkin or brown chana or pineapple.
