Mutton Biryani

Preparation

Step 1 :

Marinate mutton with ginger-garlic-green chilli paste, curd, biryani masala, yellow chilli powder, Kashmiri chilli powder, ghee, half of the chopped mint and coriander leaves, fried onion paste and a few fried onions. Keep it aside for 2-3 hours.

Step 2 :

Now take a pressure cooker and add the marinated mutton along with 50 ml of water and cook till the mutton is 80 % done. It might take 4-5 whistles or more depending upon the quality of meat. The mutton with gravy is ready. Add salt (as we have not added it in the marinaton), cover and keep aside.

Step 3 :

Now boil enough water in a pan to cook rice. Bring the water to a boil and add 2-3 tsp of salt. Cook rice till half done and strain the excess water. Keep the rice aside.

Step 4 :

Take a pot and put the mutton with its gravy. Layer the rice on top of the mutton. Spread the rice gently and don’t press as it will break. On the rice, add the left over fried onions, a bit of ghee, saffron milk and left over chopped mint and coriander leaves. Sprinkle a bit of biryani masala. Cover the lid of the pot and seal it with the dough and keep the pot on dum over high flame for 7-8 minutes and then lower the flame to the minimum and let it cook for another 20-25 minutes.

Step 5 :

Switch off the gas and let it rest for 10-15 minutes. Biryani is ready to be served with raita and salad of your choice.
