Mix the maida, oil and required water to make a fine dough.

Tuck the dough, cover it with a moist cloth and let it sit for a minimum of 2 hours.

Meanwhile, add little olive oil to the tawa and sauté onion, garlic, tomato, carrot, cabbage, beans and capsicum one after (do not to overcook, the vegetables should retain their crunchiness).

Add salt, chilli powder and pizza seasoning. Let it cool down.

Take the dough and roll with a rolling pin as thin as possible. With a round cookie cutter, cut it into small pieces.

Arrange 3 pieces of the cut dough in a row. Apply a thin layer of the peri peri dip and the hot and sweet sauce (across the three pieces in the centre. Otherwise, the sauce will ooze out while rolling).
Step 7

Add the vegetable stuffing and spread a layer of grated cheese.
Step 8

Roll the stuffed momos into neat roses.
Step 9

Steam the momos until the colour of the maida changes and is fully cooked.
