Almond is very rich in calcium, hence this soup provides daily requirements to strengthen the body.

Step 1 :

Heat butter in a pan. Add the bay leaf and chopped onions to it.

Step 2 :

Saute it on low heat till tender and translucent.

Step 3 :

Soak almonds for 15 minutes in water. Once done, peel it and run it through a blender with a little milk to make a smooth paste.

Step 4 :

In another vessel, boil half cup of water and add the maggi cubes to it. Stir it continuously till it dissolves completely.

Step 5 :

Add the prepared almond paste, salt, mashed potatoes and the prepared vegetable stock to the pan and bring it to a boil.

Step 6 :

Cook on low heat while stirring continuously. Add extra stock if needed along with milk to make it a creamy soup.

Step 7 :

Season with salt and white pepper powder if required. Serve it warm, garnished with chopped almond pieces.
