Spinach Salad

This is an easy to make healthy salad recipe. The goodness of spinach combined with lemon and an addition of pomegranate makes this recipe tastier.

Step 1 :

Trim stems of the spinach and rough chop it, then rinse well and drain. Coarsely chop almonds.

Step 2 :

Peel onions and garlic and chop coarsely.

Step 3 :

Dry roast almonds in a skillet, then remove and let it cool.

Step 4 :

Heat olive oil in the same skillet. Saute onions and garlic until translucent.

Step 5 :

Add spinach, generously season with salt and pepper and saute it briefly.

Step 6 :

Add 2 tablespoons water to skillet, cover and cook for 1 minute. Once done, remove spinach from skillet.

Step 7 :

Scrape out pomegranate seeds. Combine spinach and almonds with the pomegranate seeds.

Step 8 :

Season yogurt with salt and pepper, in a bowl.

Step 9 :

Rinse lemon in hot water, wipe dry and cut in half. Squeeze juice from one half and mix with the yogurt.

Step 10 :

Pour yogurt sauce over the spinach salad. Serve the salad while still warm.
