Sandesh is a very delicious and famous sweet of West Bengal. This recipe is specially made in honour of Independence Day, natural food colours are used to create the tricolour.
Firstly, boil the milk properly. When it will start to bubble, add vinegar to help it curdle.

Strain the excess water and wash the paneer under cold water to avoid the sour taste of vinegar.

For the natural food colour, juice carrot and spinach separately, in a blender to attain the orange and green colour respectively. Before juicing the spinach ensure to blanch it for a few minutes to get rid of the raw smell.

Now, heat ghee in a pan. Add crumbled paneer, milkmaid and vanilla essence. Cook it till it becomes dry.

Divide this mixture into 3 portions. Remove 2 portions from the pan. Cook the portion remaining in the pan for 2-3 minutes and set it aside.

Now, add the second portion of mixture in the pan, mix the spinach juice in it and cook it for 3-4 minutes on high flame. Once done, take it out and set it aside.

Now, add the last portion of the mixture into the pan and mix the prepared carrot juice in it, ensure to cook it well.

When the 3 portions are ready, allow it to cool for few minutes and then mash it well individually.

Take small portions from the 3 doughs and make small balls, attach the balls to each other to make it one sweet.

Allow it to cool down, decorate it with raisins and serve.
