In a saucepan, heat 1 cup of water and when it comes to a boil, add sugar and cook till the sugar melts.

Simmer the gas and let the water reduce till you get a one string consistency syrup.

To check, touch the syrup with your index finger tip and join in the thumb. While pulling them apart you will see a thin string forming between the finger tip and thumb.

The syrup is now ready. Turn off the gas and set aside.

: To make the Jalebi
In a large mixing bowl, add flour, curd and 1/2 cup of water and whisk to make a smooth batter.

Now add baking powder, cardamom powder and food color.

Whisk again nicely till everything incorporates well and the batter is smooth and flowing.

Pour the batter in a piping bag, cut the edge to make almost 4mm opening.

Take a wide base pan and heat ghee in it. Once the ghee is piping hot, reduce the flame.

Hold the piping firmly and carefully start making circular patterns in the hot ghee. Make 4-5 jalebis in batches.

You will see bubbles appearing. Fry till the bubbles reduce.

Use a tong and flip the jalebi and fry it from both the sides. This may take 2-3 minutes.

Using the tong, take out the jalebis one by one and dip them in the sugar syrup and let them soak for 30 seconds.

Take out the sweet and crispy jalebis from the sugar syrup and serve hot!
