Step 1 :

Wash and soak the rice for 30 mins. Chop onion and green chillies. Wash and chop the mushrooms.

Step 2 :

In a pressure cooker, heat ghee. Add the bay leaf, pepper, cardamom.

Step 3 :

Add sliced onions. Add the required salt.

Step 4 :

Stir and sauté the onions on a low flame till they become light golden.

Step 5 :

Add the green chillies and sauté well.

Step 6 :

Add the ginger-garlic paste, sauté till the raw smell of the ginger-garlic goes away.

Step 7 :

Add mint leaves and sauté for few minutes.

Step 8 :

Now add the chopped mushroom and sauté for 3 to 4 mins.

Step 9 :

Now drain the water and add the soaked rice, sauté it for 2 mins.

Step 10 :

Add 2 glasses of water and mix well.

Step 11 :

Pressure cook the mushroom pulao for 15 mins or for 2 whistles on a low flame.

Step 12 :

When the pressure settles down, open the lid and serve the mushroom pulao with onion raita.
