Himachali Galgal ka Khatta

A tangy, citrusy pickle made for winters in the villages of Himachal using Galgal lemons.

Cooking Steps

Galgal ka Khatta

Step 1 :

Take 1 piece of galgal / hill lemon / citron and removes its outer skin and cut it into small pieces.

Step 2 :

Take one bowl of coriander leaves and half bowl of mint leaves, and 2-3 green chillies in the mixer or grind it on sil batta in desi style.

Step 3 :

Add 3 tsp of jaggery powder , 1/2 tsp of black salt and 1/4 tsp of cumin seeds.

Step 4 :

Add hill lemon / galagal into the mixture and mix it well.

Step 5 :

Take one bowl and add burnt coal with 2-3 drops of mustard oil and smoke it up for 2 minutes.
