Koa Pad Lee Gin is a delightful fusion dish combining the sweetness of Litchis with savoury chicken and vegetables in fragrant jasmine rice.

Cooking Steps

Litchi Fried Rice/Koa Pad Lee Gin

Step 1 :

Take a wok and bring it to high heat, add the oil and add the minced garlic and cook till the raw smell wears off.

Step 2 :

Now add the chopped chicken and toss it till it cooks well. Next, add the mixed vegetables and cook them as well.

Step 3 :

Season them with salt and pepper.

Step 4 :

Next, add the cooked and cooled jasmine rice and give it a quick mix.

Step 5 :

Finally add the fish sauce, oyster sauce and soy sauce and give the rice and good toss, taking care not to break the rice.

Step 6 :

Finally, add the fresh lychee pieces and gently mix them in.

Step 7 :

Transfer to a serving plate and enjoy hot.
