Schezwan Cheesy Baked Potatoes

This is a great starter relished by both adults as well as children. It contains cheese and cream which is an all-time favourite among kids. The Schezwan flavour adds a twist and the freshness of coriander completes the dish.

Preparation

Step 1 :

Half boil the potatoes (do not fully cook it).

Step 2 :

Peel the potato skin and sauté them in oil/butter as per your taste.

Step 3 :

While sautéing, add green chillies (slit in two), chopped bell pepper, pinch of black pepper and salt. Cook till it turns slightly golden brown.

Step 4 :

Prepare a dressing of 3 tablespoon Schezwan sauce in 1 tablespoon cream. Add a pinch of black pepper and mix well.

Step 5 :

On a baking tray, add the sautéed potatoes and bell pepper.

Step 6 :

Layer these with the Schezwan sauce dressing in generous amount.

Step 7 :

Shred 3 cubes of cheese over this.

Step 8 :

Add 4-5 cheese slices to cover this layer.

Step 9 :

Sprinkle black pepper. Add chopped fresh coriander for garnishing.

Step 10 :

Bake for 10 minutes till the cheese melts. Serve hot.
