Vegan Coconut Thai Soup

Here is a Thai special soup that is easy to make and tastes delicious.

Step 1 :

In a sauce pan, boil the vegetable stock or boil 2 cups of water and add maggi cubes to prepare a stock. Add lemon grass stem, Thai ginger and lemon zest. Boil it for 5 minutes till aromatic.

Step 2 :

Later add pepper powder, brown sugar and coconut milk and allow it to boil.

Step 3 :

Meanwhile in another pan, add olive oil, lightly fried garlic, chopped onion and carrot. Add tofu.

Step 4 :

Later, add chopped green chillies, soya sauce, salt and sautè.

Step 5 :

Now, add the veggie mixture to coconut milk mixture and allow it to boil before turning off the flame.

Step 6 :

The vegan coconut thai soup is ready to be served along with Jasmine rice or rice sticks. Keep in mind that you cannot eat Thai Ginger or lemongrass pieces, leave it aside in the bowl after consuming the soup.
