Som Tum Thai is green papaya salad that combines all four tastes - sour, chilli, sweet and salty. It should be had with sticky rice.

Step 1 :

Drain the soaked sliced raw papaya well.

Step 2 :

In a large mortar and pestle, pound garlic and chilies until there are no big chunks remaining.

Step 3 :

Add palm sugar and mash with the pestle until it turns into a wet paste and all the chunks dissolve.

Step 4 :

Add long beans and pound just until they’re broken.

Step 5 :

Add dried prawns and peanuts and pound to break the peanuts up slightly.

Step 6 :

Add fish sauce and lime juice.

Step 7 :

Add sliced raw papaya and tomatoes, mix using the pound-and-flip method.

Step 8 :

Once the tomatoes are slightly crushed, it’s done! Serve with sticky rice.
