Sprouts Dhokla Muffins
Firstly In a mixer jar, add sprouted moong, spinach, garlic, and green chillies together. Add 2 tbsp water and grind them to make a fine paste.
Now, take a bowl and add the ground mixture into it. Add salt, lemon juice, and gram flour along with the required amount of water. Whisk them well to make a thick batter.
Add fruit salt and mix them well.
Now, grease the heart-shaped muffin mould with oil. Pour the batter into the mould and steam for about 15 minutes till it is completely cooked.
After 15 minutes, insert a toothpick and check it for readiness. If it is sticking to the toothpick, then cook it for 2-3 minutes more.
Once cooked, allow the Muffin to cool down for a few minutes then de-mould it. Savoury muffin is ready!
Muffin Tempering
Heat oil in a small pan. Over medium heat, add mustard seeds, and sesame seeds. Once seeds crackle, pour the tempering over the Savoury muffins.
Coconut Icing
Take a mixer jar add coconut, curd, and salt as required and make a fine paste. Now, spread this coconut icing on muffins.
Coconut Icing Tempering
Heat oil in a small pan. Over medium heat, add sesame seeds, and mustard seeds, once the seeds crackle, add curry leaves, and green chillies. Sauté for a few seconds and mix well. Pour this tempering over the icing.
