Quinoa Pesto Mozzarella Bake

A healthy and colourful baked dish with the goodness of quinoa, veggies and cheese. My kids love this and I’m happy that they are eating something healthy and loving it too!

Preparation

Step 1 :

Cook quinoa in the vegetable broth until it turns fluffy (around 20-25 minutes). Set aside.

Step 2 :

Heat the oven at 400 degrees. Place all the veggies in a baking sheet and drizzle some olive oil and salt. Roast for 15 to 20 minutes, depending on your veggies size.

Step 3 :

Remove from the oven. In a pan, add the veggies, pesto and quinoa and mix them.

Step 4 :

Transfer it to a baking dish. Top it with loads of mozzarella cheese and bake at 350 degrees for 15 minutes. Serve hot.
