An earthy East Indian dish featuring banana stem, potatoes, and spices, perfect for a nutritious meal with a unique flavour.

Cooking Steps

Banana Stem Sabzi

Step 1 :

Prepare the veggies by cleaning banana stem and potatoes thoroughly.

Step 2 :

Slit the banana stem into 4 portions width-wise. This will easily help remove the extra fibre strings. Them chop them into pieces.

Step 3 :

Peel the potato and chop them into small pieces.

Step 4 :

Grind the following into a fine paste (preferably with hand): mustard seeds (set aside one spoon for tempering), cumin seeds (set aside one spoon for tempering), garlic pods and green chillies. You can add a bit of water if needed.

Step 5 :

Take a large frying pan, add oil and bring it to heat. Once it turns hot, toss in mustard seeds and cumin seeds. Fry till they pop.

Step 6 :

Add onion and garlic into them and continue frying on a medium flame till the onions turn translucent.

Step 7 :

Toss in the prepped banana stem and potato slices. Mix well.

Step 8 :

Sprinkle salt, turmeric powder and chilli powder and continue mixing till the raw aroma fades.

Step 9 :

Pour the paste and add water based on preferred consistency. Mix well.

Step 10 :

Add the badhi, mix and cover with a lid.

Step 11 :

Let it cook on medium flame for 5 minutes and then in low flame for 15 minutes.
