Method:
Take a large wide vessel and add the flour, salt and oil. Mix well. Start pouring small quantities of water and making dough.
Once the dough holds shape, knead gently and set it aside covered with a wet cotton cloth or a lid.
Take a medium sized frying pan and add oil. Heat it in high flame. Once heated, turn the flame to medium and add garlic, ginger and green chilli.
Stir it for a minute and then add carrot. Stir well for 2-3 minutes.
Lastly add the lettuce, salt, pepper, and mix well. Cover and cook till the veggies are half done. Set it aside to cool.
In a small frying pain, heat 3 tsp oil. Reduce the flame to medium and fry with continuous stirring till it turns golden brown. Make sure not to burn them. Set it aside to cool.
Knead the dough gently and pinch them into small coin-sized balls.
Flatten one and dip it in the dusting powder. Lay it on the rolling board and roll as thinly as possible. Make sure the edges are thinner compared to the centre part to avoid them breaking.
Take 1 small scoop of the stuffing with your or a spoon and place it in the middle of the rolled sheet. Using your fingers or a small brush, slightly coat the edges of the sheet with slurry. Don’t coat too much as it will tear.
Gently lift the corners from one side and start making small pleats with your fingers. The roll will start covering the stuffing. Once you are at the end, pinch the top tightly close and remove the excess dough.
Spread a cooking or baking paper over a large plate to place the stuffed momos.
Steaming Momos:
Before you start stuffing the momos, you can pre-steam the steamer. Take the steamer and place the lowest plate holder for planning the water level. Pour water till it touches the bottom of the plate. Cover and heat it for 10 minutes.
Grease the steamer plates with a little oil and place the momos with an inch gap between each.
Cover and steam for 15-20 minutes till they turn translucent.
Repeat the same for all the momos. You do not have to repeat the pre steam as the steamer and plates will already be hot. If you are making more, make sure to keep adding water when they are lesser than half of what it needs be to steam.
