Spicy Coriander Rice Bath

A fragrant, herby South Indian dish that brings together fresh coriander and subtle spices for a delightful meal.

Method:

Step 1 :

Wash the rice twice and strain the water. Let it soak for 20 minutes. Meanwhile, chop coriander and onion.

Step 2 :

Take a mixer jar and toss in coriander, onion, chillies, ginger, coconut and garlic (optional). Blend well to paste.

Step 3 :

In a small frying pan add ghee and heat it, break the whole cashes into 2 or 4 pieces each and fry golden. Set it aside.

Step 4 :

Take a cooker and add oil, once it heats, add in jeera, urad dal, hing and curry leaves. Fry them for 1 minute.

Step 5 :

Pour the coriander paste and rice. Add salt to taste and water in 1: 2 ratio of the rice.

Step 6 :

Mix well and close the cooker. Let it whistle 3 times.

Step 7 :

Once the steam comes off, open the cooker and garnish it with the cashews. Serve hot with cucumber/onion raita.
